Why an advising team is important:
Slow Food Boulder County’s work is rooted in place. The challenges, and opportunities, facing our local food system are complex, and they can’t be addressed by any one organization alone. That’s why we are guided by advisors from across our community, we have carefully selected a PR expert, a regenerative farmer, a slow food chef, a critically acclaimed storyteller and skilled grant writing/financial expert.
Our advisors help ensure that our programs are informed by lived experience, practical realities, and diverse perspectives. They challenge our assumptions, strengthen our strategies, and keep our work accountable to the people and landscapes it is meant to serve.
By drawing on the knowledge and leadership already present in Boulder County and beyond, we are able to build more effective programs, foster meaningful collaboration, and advance a food system that is good, clean, and fair - for everyone!

Kuvy Ax
With 25 years of experience, Kuvy has led communications for a curated mix of values-driven food and beverage companies, organizations, and events, working with both nationally recognized brands and Colorado-based companies with regional and national reach. ROOT is known for pairing big-picture strategy with deep expertise across the natural, organic, and mission-led food space.
Kuvy’s volunteer and leadership work reflects that same commitment. She has served as President of Pollination Planet, past Co-Chair (and current Marketing Strategist) of Slow Food Boulder County, and on the boards of the World Travel Association and Les Dames d’Escoffier. She has also served on the Colorado Tourism Office and Department of Agriculture’s Heritage & Agritourism Committee.
Kuvy is a frequent judge and speaker for New Hope Network’s Natural Products Expo West and Expo East, including the NEXTY Awards and Pitch Slam. Outside of work, she loves traveling and exploring food and culture along the way.
Chef Daniel Asher
There is so much to say about Chef Daniel Asher, we are grateful he is part of our team. He is a culinary leader known for championing local agriculture, food justice, and regenerative sourcing across Colorado’s restaurant scene.
As executive chef and partner at River and Woods and Acreage, he brings decades of experience, from his work with Edible Beats to his role as a certified Raw Foods Chef and Slow Food advocate. Through education, advocacy, and flavor-forward cooking, Daniel cultivates connection between land, kitchen, and community
Lindsey Hagen
Lindsey Hagen is an Oscar qualified Director, Executive Producer and Development Executive with a focus on cause related storytelling. Lindsey has a background in sales and marketing, journalism, brand strategy and documentary filmmaking.
She leads a successful career ideating and pitching meaningful stories to brand and network partners, creating compelling human centered films and campaigns.

Mark DeRespinis
Mark is the founder of Esoterra Culinary Garden, Snail of Approval agroecological farm in Boulder County known for growing rare and exquisite produce Colorado’s top restaurants.
Mark began farming at Ojo Caliente in New Mexico and now cultivates everything from celtuce to mokum carrots, often inspiring chefs to build menus around his harvests. His work is rooted in regenerative agriculture, community education, and a belief that flavor begins in the soil.
