Carrot Feta “Bruschetta”

Try this summer appetizer recipe with fresh carrots! It is savory, sweet and delicious.

This is a great recipe for when you have an abundance of carrots

Sauté carrots in butter until soft, about 5 minutes. Remove from heat.
Add salt and pepper. Combine carrots with honey and coriander.
Spread feta cheese on toast. Lay carrots on top of cheese-toast.
Drizzle with balsamic, honey and olive oil.
Server warm or room temperature.
Enjoy!
Instructions
1 lb carrots sliced in lengthwise strips
1 T butter
2 tsp honey and some for drizzle
¼ tsp coriander
1 tsp balsamic vinegar
4 oz. feta cheese
2 tsp olive oil
Salt and Pepper for seasoning
12 slices of toasted baguette bread
